You might not know…
..that Extra Virgin Olive Oil (EVOO) is by definition only the one obtained from the olive, the fruit of the olive tree, using solely mechanical means, in conditions which do not alter the oil in any way.
Once manually cropped, olives are stocked in boxes and taken to the olive mill in the same day.
They will be first washed and separated from leaves an wood before getting into the grinding machine to become a paste. This paste will then be processed to gather little oil particles into bigger ones. The last, but mostly important passage is the actual extraction of oil , after the paste gets into a spinning machine where oil will be separated from water and from the remaining paste.
Oil will then be stocked in stillness still recipient until the final passage of bottling.
NUTRACEUTICAL PROPERTY
EVOO is rich in mono saturated fats which increase good cholesterol and reduce the bad type.
It also contains polyphenols which act as anti oxidants reducing the oxidative stress throughout your body.
Moreover:
-it has strong anti-inflammatory properties.
-it prevents strokes.
-it is not associated with weight-gain and obesity.
